Roasted Red Potato Wedges
A delicious alternative to mashed potatoes that is a favorite here at Heritage Park.
6-8 good sized red potatoes
Olive oil as needed
Rosemary, Garlic powder, salt, pepper
Pre heat oven to 425*
Wash potatoes with a vegetable brush under running water, remove any green spots, or eyes.
Cut each potato into 6 even wedges length wise.
Pat dry with paper towel, removing any excess moisture.
Place wedges in a large enough bowl so they can be tossed.
Drizzle with olive oil and season to taste
Place wedges in a single layer on a cookie sheet and into oven
Roast for aprox 20min depending on your oven
Check for doneness with a fork
Serve with sour cream, ketchup, garlic aoli or your choice of dipping sauce
